The Bison is Bull's answer for purists who want to integrate classic, fire-fueled lump charcoal or wood-chunk cooking directly into a high-end masonry island. Instead of dropping a cheap, standalone charcoal kettle onto a luxury patio, the Bison provides an industrial-grade, drop-in alternative. It is constructed entirely out of heavy-duty, 14-gauge 304 stainless steel, ensuring the chassis can comfortably handle the intense, volatile radiant temperatures unique to glowing charcoal embers without warping, scaling, or rusting.

Key Structural & Thermal Performance Features

  • Adjustable Charcoal Elevation Bed: Equipped with an internal crank-lever system that lets you mechanically raise or lower the entire glowing charcoal basket. You can crank the coals right beneath the grates for high-heat steakhouse searing, or drop the bed to the bottom floor for "low and slow" smoking sessions.

  • Airflow Optimization & High-Temp Oven Gasket: The firebox has been engineered with a specialized perimeter oven gasket seal and a highly adjustable manual venting network. This allows you to choke down or increase oxygen delivery with incredible precision, tightly regulating internal temperatures.

  • Front Access Loading Door: Built into the lower face of the grill head is a heavy-duty, front-opening hatch. This allows you to safely shovel in fresh charcoal briquettes or toss in hickory/mesquite wood chunks mid-cook without ever lifting the main hood or disturbing the food on the cooking grates.

  • Single-Piece, Dual-Lined Hood: The seamless roll-top lid features an internal radiant liner that locks smoke and convective heat directly within the food chamber, while isolating the exterior shell to protect the stainless steel from developing heat stains.

  • Massive Solid Stainless Steel Cooking Grates: Outfitted with 4 heavy-gauge solid stainless steel cooking rods. These grids boast immense thermal mass, meaning they hold heat beautifully for deep, professional sear marks and resist structural degradation from acidic charcoal ash.

Cooking Area Breakdown

  • Primary Cooking Surface: 575 Sq. Inches (Measures 30" x 19 1/4", comfortably holding roughly 24 large burgers).

  • Secondary Warming Rack: 176 Sq. Inches (Often utilized for indirect smoking or roasting).

  • Total Combined Cooking Footprint: 751 Sq. Inches.

Specifications & Island Cutout Dimensions

Crucial Warning for Builders: Because a charcoal firebox drops significantly deeper to accommodate ash collection and the adjustable coal bed mechanism, the framing cutout dimensions for the Bison are completely different from Bull’s standard 30-inch gas models (like the Outlaw or Angus). Your masonry crew must frame the island cavity to these specific proportions:

Metric Profile Dimension Requirements
Cutout Width 29 1/2"
Cutout Depth 18 1/4"
Cutout Height (Depth Drop) 13 1/4"
Overall Unit Dimensions 32 1/4" W x 25 1/4" D x 25 1/4" H
Net Structural Weight ~126 lbs
Factory Warranty Lifetime on Firebox and Cooking Grates / 1 Year on Component Trim

Installation Integration Guide

⚠️ The Combustible Framing Guardrail: Because a charcoal firebox lacks insulated dead-air zones and can easily reach temperatures exceeding 700°F during a heavy sear, it radiates tremendous thermal energy downward and outward. If your outdoor island framework uses wood framing or synthetic composite materials instead of metal studs and cement backer board, you must never drop this unit in raw. You will need to check framing clearances or integrate structural stone barriers to mitigate severe structural fire hazards.
